LANGKA LECHE FLAN
Ingredients:
¼ chopped langka
½ cup white sugar
4 whole eggs
1 can or 300ml condensed milk
Procedure:
1. Caramelize ½ cup of sugar in a pan.
2. Pour into leche flan mold and spread to coat the bottom.
3. In a bowl, combine eggs, langka and condensed milk.
4. Stir well. Pour into the mold and steam for about 30 minutes or until set.
5. Chill and serve cold.

DILG Project CURE
On February 15, 2009, Mabel at Your Service featured the Department of Interior & Local Government XI Project CURE (Comprehensive & Unified Response to Eliminate Red Tape in LGUs). According to Atty. Erwin M. Enad, the DILG Chief Legal Officer, Project CURE was created to foster citizens’ knowledge, capacities and alliances, to altogether curb Red Tape in LGU’s.
The battle against red tape calls not only for more effective efforts of the government but also for renewal of political will. DILG urges all executive, administrative and legislative domains of the LGUs to participate in General Advocacy Orientation Programs, Capability Building and Citizen’s Feedback (Enforcement) to improve the efficiency and effectiveness of LGUs in the delivery of public good and services to the public through anti-red tape practices, therefore preventing graft and corruption in their respective jurisdiction.

January 30, 2009 MBM Cooking Demo: SHRIMP TEMPURA
Ingredients:
½ kilo sugpo/shrimp medium size
1 pc egg
½ cup flour
¼ cup ice water
Pinch of salt
Vegetable oil for frying
- Remove heads and shells from shrimps without removing tails. Devein the shrimps. Make two or three incisions in the stomach sides of the shrimps.
- Lightly press the back of shrimps by fingers. Using a knife, remove the dirt from the tails of shrimps. Dry shrimps on paper towels.
Making Tempura Batter
- Mix eggs and ice water in a bowl. Add flour in the egg mixture.
- Lightly mix the batter. Flour shrimps before frying.
- Heat vegetable oil to 340F degree in a deep pan. To check the temperature of the oil, drop a little tempura batter into the oil. If the batter comes up right away instead of sinking to the bottom of the pan, it's about 360 F degree. If the batter goes halfway to the bottom and comes up, it's about 340F degree.
- Pick the tail of shrimp and dip shrimp in the tempura batter. Immediately fry the shrimp until crisp.
- Serve tempura shrimp right away with tempura dipping sauce or salt. Tempura is best served hot.
