September 18, 2008 edition of Maayong Buntag Mindanao Cooking Demo:

EMPANADA

Ingredients:
¼ kilo giniling na karne
1 cup patatas, cubed
2 tbsp garlic, minced
2 tbsp onions, chopped
1 sachet ginisa mix
½ cup TVP(textured vegetable protein) soak in ½ cup water

Procedure:
1. Sauté all ingredients until done.

PASTRY/CRUST

Ingredients:
2 cups all purpose flour
½ cup lard
½ cup water

Procedure:
1. Cut in lard into flour.
2. Add water little by little until dough forms into a ball.
3. Roll. Cut into desired shape.
4. Fill each pastry with meat filling. Seal properly.
5. Bake until done or deep fry.

September 4 edition of Maayon Buntag Mindanao cooking demo:

MANGO MOUSE

Ingredients:
1 cup mashed ripe mango
1/2 cup white sugar
100gms. white chocolate or dark chocolate
1 box all purpose cream
1 tbsp. unflavored gelatin dissolved in warm water
2 pcs. egg whites
1 tsp. granulated sugar

Procedure:
1. Mixed mango and sugar. Cook until done.
2. Melt chocolate in double boiler. Add gelatin and mix well.
3. Add ¼ of the cream. Blend.
4. Beat egg whites until soft peaks. Fold into melted chocolate.
5. Beat all purpose cream until thick. Add sugar.
6. Fold in chocolate mixture.
7. Fill in cups. Chill before serve.

September 12 edtion of Maayon Buntag Mindanao cooking demo:

NGOYONG

Ingredients:
1 cup all purpose flour
1 cup fish meat
1 cup singkamas
¼ cup chopped onions
½ cup shredded carrots
1 tbsp chopped celery
1 tsp ngoyong powder
1 tbsp salt
1 pc egg (optional for commercial)
1 cup all purpose flour for rolling
1 cup oil for frying

Procedure:
1. Mix all ingredients and shape into strips or oblong.
2. Roll in flour. Steam for 10-15 minutes.
3. Fry as needed.
Note: Rolls can be kept in refrigerator after steaming.

SAUCE

¾ cup water
2 tbsp soy sauce
1 tbsp vinegar
1 tbsp cornstarch
½ cup sugar
Salt to taste
Procedure: Mix all ingredients and cook until thick.
